Day 1: Summer Kick-Off Challenge

Happy Summer! Welcome to the first day of summer, and the Summer-Kick off Challenge!

I’m very excited for the challenge to begin, and even more excited about the number of challengers this time…

Thank you all for signing up, and let the challenge begin!

If you haven’ t already and would like to, introduce yourself to other challengers in the Welcome forum. You can also post your favorite sugar-free meals and recipes on the Sugar Free Food forum, and get inspiration from other challengers. You can start your own forum topic as well.

I will post daily sample menus, inspiration, and reasons-to be sugar-free for the next 10 days. If you would like to get these posts sent straight to your inbox, subscribe to my site using the box on the top right of my site. You can also follow me on Facebook, Instagram, and Twitter, where I will be posting extra information and my day of eats using the hashtag #sfchallenge. Please get the word out to your friends, too, by posting your daily sugar-free eats and thoughts with this hashtag!

Here is today’s sample menu:

Breakfast: Grain-Free Lemon Poppyseed Muffins. Vegan Option: Smacaroons

Lunch: Spicy Cilantro Vinaigrette Salad with Crispy Corn Strips

Snack: Fruit and Tea Popsicles

Dinner: Lemon Moroccan Chicken with Olives. Vegan Option: Orange and Berry Salad

Dessert:  Pick-a-Fruit Crisp

    Today’s the longest day of winter here!! First day of sugarfree went well, also congrats on such a great turnout! Those recipes look fantastic, especially with those olives yumm.

    Today was easy because I was doing cement work in my yard…. however I can tell that I have not had any sugar (in the forms mentioned on the sugar free challenge) today and I am already getting a headache! I just finished some berry crisp and that was weird not putting brown sugar on it…

      So glad day 1 went well for you! Sometimes sugar-free headaches happen if you are used to having more sugar. It will get better, though! it just takes a day or two to get it out of your system.
