Day 2: Summer Fun

Welcome to to day 2 of the Summer-Kick off Challenge!

When you think of summer, what do you imagine?

Maybe iced tea, popsicles, swimming, going to the beach, barbecues, fireworks, sweat, board games under the shade, reading into the afternoon, watermelon, fresh produce…that’s what I think of!

Here is today’s Summer-Inspired sample menu:

Breakfast: Tropical Chia Pudding Parfait

Lunch: Fresh Summer Gazpacho

 

 

 

 

 

 

Snack: A big bowl of fresh Watermelon and a Hydrating Coconut Lime Sparkler

Dinner: Homemade Spring Rolls with Spicy Peanut Sauce

Dessert:  Raw Banana Cream Pie with Chocolate Crust

    Alex, will have to try the banana creme pie recipe. GREAT idea. Think I’ll change the crust up a bit and use pecans with some English Toffee stevia and delete the chocolate – yum. Plus like that it’s raw and just a few ingredients. Thanks for the inspiration.

      yes! it is one of my favorites, and very versatile. I made a chocolate-peanut butter-banana once…divine!

    Am going to have the spring rolls for dinner…I will probably add chicken on the side…day two with no sugar so far and I am feeling ok…
