Is it Going to Rain Today?

It’s a Busy Day

Hello all! I have a busy day today, so I don’t have time to write up a huge post with recipes, health facts, blah, blah, blah. But I just want to let you know I’m thinking about all of y’all!

Thought-provoking, mind-prodding question of the day:

Did you guys watch the Super Bowl yesterday? Did you go (or throw) a big party?

I am not really a big football person and honestly I did not know it this weekend until Saturday! I know, pretty sad….But I redeemed myself by watching the game! Well, parts of it…I liked watching the funny commercials and the half-time show the best 😉

How do you make Mousse?

With Tahini!

But before I start on my subject of today’s, I have to tell you a quick story:

Yesterday, I was looking around my kitchen when I saw 2 cookie sheets in between my fridge and the wall! Like I said before, the lady who sold us our house recently left kitchen goodies around for me! These cookie sheets were from her, too. So, like any chef would do, I reached my arm into the crack to pull the sheets out. The one closest cam out fine, but the one in the back gave me difficulties….My arm got stuck in between the wall and the fridge!! Ahhhhh! I couldn’t get it out at all, and it was squishing me badly! I called for my sister, and we were both laughing while she tried to move the fridge :D. Don’t worry, my arm came out, and we did NOT have to call the ambulance.

On to mousse.

Over the weekend I tried a little bite of my mom’s chocolate halvah bar she bought. Oh my was it heavenly!!!! The way it flaked and melted in my mouth made my taste buds melt. Mmmmm. It wasn’t that sweet, either, so I was able to eat a couple bites.

You may be wondering, what is Halvah? Well, it is a dense, sweet confection that is served across the Indian subcontinent, Central Asia, West Asia, North Africa, the Horn of Africa, the Balkans, and the Jewish world. There are two different kinds of halva, nut-butter-based and flour-based. The one I tried was nut-butter-based from Tahini (sesame paste).

The Ingredients of this bar: Pure sesame seed, malted corn barely syrup, cocoa liquor, natural molasses powder, cocoa butter, egg white, natural vanilla flavor, lecithin.

After looking at these ingredients, and a few other recipes, I tried to create my own. Well, it failed.

But I created a dairy-free tahini chocolate mousse! How?

By beating an egg white to a stiff peak, heating cocoa powder, water, and tahini in a saucepan, and mixing. Store in the fridge overnight and voila!

Me and My Mousse. Ha! It looks like its falling on my head! (Pardon my unbrushed hair and pj's please)

Ah well, back to the drawing board for the halvah recipe.

Okey Dokey Artichokey

Good day good people! Welcome Summer! Yesterday was the summer solstice, therefore today is officially the second day of summer! Yay!

I can’t believe that it hasn’t even been officially summer yet. Here in Florida, the temperature has been consistently 90-100 degrees everyday! I LOVE it, though! I love feeling sweat rolling down my back while I workout, and I love feeling the sun beating down on my skin! I know…..I’m strange…..

This morning, I took my beautiful dog, Pudder, on a walk through the woods. Out my bedroom window, you can see a lake. Behind the lake, there is a twisty trail that follows the river around. Its such a great walk because my I don’t have to keep Pudder on a leash! (He loves that, too)

Before I went on my walk, however, I ate this for breakfast:

“What is this thing you had for breakfast, Alex?”

Well….I bought the whole wheat bread at Costco (oh how i love costco. I should do a post on it someday), but you beautiful bakers could easily use your wonderful homemade bread instead. Then, I spread almond butter mixed with cinnamon and ground flax in it. I usually always mix either cinnamon or cocoa powder into my almond butter because I think it tastes better this way. Then, I topped the bread with all-fruit (no sugar added) orange marmalade!

Mmmm…..This was good. It tasted like spiced oranges!

Anyway, On to the title of the post, Artichokes!

My sister and I LOVE artichokes! Ever since we were about 8 and 6 years old, it was our favorite food. We liked them boiled, and dipped in lemon-butter sauce. They can be quite expensive, though, so we only it them on special occasions, or when they go on sale. Last night was one of those moments!

With my dinner. I had a nice salmon patty drizzled in balsamic vinegar (the salmon patty was from costco, also. By the way, I get my almond butter from costco, too), with some olives, cucumbers, and brown rice (not pictured because it couldn’t fit on the plate-sorry rice!)

Off to go eat lunch! Ciao!

My New Favorite Meal

Hello Hello! What a beautiful Saturday! What can be better than a sunny day? Today I played a tennis match in the morning. It was a long one that lasted about 2 1/2 hours! Anyway, it was a good sweat.

I’ve been meaning to tell you guys about my new favorite cereal mix. Its warm, creamy, and hearty: the perfect combination to start the day on the right foot, a good afternoon pick-me up, or a nice warm dessert on a cold winter night.

This cereal mix reminds me of apple pie…only in a bowl. It starts out with a serving of Bob’s Red Mill Apple Cinnamon and Grains cereal. Then a scoop of almond butter, and a scoop of applesauce.

I really like this cereal because it contains a good mix of grains, bits of dried apples, and a good dose of cinnamon. They don’t add any sugar, and they don’t skimp on the cinnamon: both of these are pluses in my book! Here is the official ingredients list:

Ingredients: whole grain hard red wheat, rye, oats, dried apples, whole grain triticale (wheat), barley, brown rice, cinnamon, oat bran, flaxseed

I could probably make the mix myself, and it would be pretty easy. For the meantime, though, I’ll stick with the mix.

Ta Da! I know it looks like a mess, but trust me when I say it tastes good! I don’t know what to call it yet….apple pie sludge? creamy apple dreamy? Any Ideas??
