Spoonful of Gluten Free

Yes, gluten free. The past week or so I have been having tummy issues (every time I eat, it hurts!), so I have decided to experiment by going on a gluten-free diet to see if it helps my poor tummy.

This means my last, yummy cornbread recipe is off the menu, right?

WRONG-O!

I picked up a pack of brown rice flour to experiment with. I used the exact same recipe, found HERE, but instead of adding 1/2 cup of whole wheat flour I added 1/2 cup brown rice flour.

Served with a bowl of veggie-rice-and-bean soup

It turned out great! I might have liked it even better than my original recipe. The brown rice flour made it a bit fluffier, but it still had that authentic “corny” taste.

Anita also had a great idea, and suggested that I toast the cornmeal in the cast-iron skillet before I bake it. Thanks, Anita! I will try that out next time!

Now, onto a gluten-free breakfast crepe:

HEAB has been taunting me nonstop with her flourless crepes. I have made a few of them, and simply spread some coconut butter on it. These crepes haven’t been too special, but today’s was especially noteworthy.

Savory Carb-Free Crepe

~This crepe is free of carbs, gluten-free, dairy-free, and of course, sugar-free! It is great for a fancy luncheon or brunch, but quick and easy for any meal during the week.

Ingredients

Serves 1

  • 2 eggs
  • 1/4 teaspoon baking powder
  • salt and pepper (I used about 1/8 teaspoon of each)
  • Tablespoon of fresh herbs of choice (Today I used fresh cilantro leaves, but oregano, thyme, or basil would work great, too!)
  • Fillings: I used sliced bell peppers, tomatoes, red onions, spinach, and capers.

Using a dab of olive oil, lightly coat a skillet (I used my cast-iron) with the oil. Heat pan on medium heat. Next, in a small bowl, whisk the eggs, herbs, baking powder, and salt and pepper together. Pour the mix into the pre-heated skillet and cover. Let the crepe bake until the top gets bubbly and fluffy, there is no need to flip it. Carefully remove the crepe from the skillet-try hard not to break it because it is just so darn pretty! Then fill with your favorite fillings and wrap it up! Top with more herbs for a beautiful garnish.

Coffee or Tea?

Tea or Coffee? The question that haunts many, many people in the morning.

Personally, I am a fan of both. They both have great, intense, rich, and sometimes delicate flavors.

Tipu’s Chai, a chai tea company based out of Montana, contacted me a few weeks ago and asked if I would like to try some free samples.

Free food? Of course I would!

They were so kind and sent me a package of their instant chai tea “with no preservatives, no sugar and no artificial sweeteners.” I learned that most instant chais do contain these three things, so I was very happy to learn that it didn’t!  It would be great for the lactose intolerant and diabetic.

The directions say to simply add it to warm milk, but I added it to warm almond milk. It was very good!! A little bit of this stuff goes a long way!

My mom, who is a big chai fan, loved the tea because it was rich and full-bodied. She said, “It is not like the chai that you get in a coffee shop with the sugar and milk and froth. Instead, it tastes very authentic. Just like the Indians make.” She should know because she has an Indian friend who makes her own chai tea.

Now onto coffee. Mocha to be more specific.

I have always been a big fan of iced mochas. When I was about 8 years old, my mom bought me a mocha mix to make my own mocha shakes. They were so good, yet they were filled to the brim with sugar. On average, a small mocha purchased at a coffee house has atleast 30 grams of sugar. Some of them having as much as 50 grams. Sheesh, that’s a lot of refined carbs.

Alas, I craved a mocha one morning…

My solution: Mocha Oatmeal!

Mocha Oatmeal

~This is a great substitute for those high-sugar drinks. It also fills you up, and keeps you satisfied!

Serves 1

Ingredients:

  • 1/2 cup oats
  • 1 cup milk or milk substitute (or water, but the milk makes it super creamy. I used almond milk)
  • 1 Tablespoon cocoa powder
  • 1 Tablespoon instant coffee mix (I actually cheated here and used Caffix, a decaf instant “coffee” made from barley…)
  • Toppings: sliced almonds, chocolate shavings, or even whipped cream. Be creative!

Heat milk and oats in saucepan until it begins to boil. Turn down to medium heat, and stir until oats are cooked. While stirring, add the cocoa powder and coffee.

Serve in a bowl, or a coffee mug and top with your toppings of choice!

An Old-New Grain

Eden Organic sent me a package of Kamut Flakes to try and review. (I must say that I love receiving packages-especially when they contain food!)

Kamut is an ancient wheat (which means it does have gluten) that has a nutty, earthy flavor. It is a complex carbohydrate with 4 grams of fiber, 8 grams of protein, and 70% daily value of manganese per serving. It can be made into a hot cereal (like oatmeal) by cooking it in water for about three minutes. It can also be used in muesli, granola, energy bars, and baked goods.

I first tried making it into a hot cereal. Review: Different, but good. It isn’t a creamy cereal, but instead a nutty, rich, and earthy grain. In my opinion, kamut is more of a savory grain rather than a sweet grain. I liked it with a dash of olive oil and some salt and pepper.

I also tried adding kamut to some nuts, and toasting them to make a yummy salad topping (or granola). Eden sent a recipe booklet with a nice recipe called Curry in a Hurry. I will definitely be trying this soon!

Eden Organics started out as a Co-op in Ann Arbor, but they slowly began to grow into an world-wide business. They pride themselves on being a truly natural company. While browing through their catalog, I saw that they carried a lot of authentic Japanese products like brown rice mochi, macha tea, and wasabi.

Big Thanks With Muffins

Wow! I can’t believe all of the wonderful feedback I received from my last post about McDonald’s “Real” Fruit Smoothies. If anyone needs anymore ideas for smoothies, just look at the plethora of comments from yesterday’s post! Thank you so much to everyone who helped spread the word, and to those who provided great insight! I loved reading every single one of your comments, and tried to reply to as many of you as I could. Carrot-Apple Bran Muffins

Yield: 18 muffins

Carrot-Apple Bran Muffins

~These muffins are optionally vegan, dairy-free, high-fiber, whole grain, and of course, sugar-free!

Ingredients

  • 1 1/2 cups whole wheat flour
  • 1 1/2 cups bran
  • 1 1/2 cups milk or milk substitute (I used almond milk)
  • 1 Tablespoon apple cider vinegar
  • 2 teaspoon baking powder
  • 1/2 teaspoon of baking soda
  • 1/2 teaspoon salt
  • 2 Tablespoons olive oil (this can be omitted for those watching their fat intake)
  • 1 egg or egg substitute (I used a chia egg. which is 1 tablespoon of chia seed mixed with 3 tablespoons of water-let sit for 20 minutes before using)
  • 1/2 cup chopped walnuts
  • 1 chopped apple (I kept the skin on)
  • 2 carrots-chopped or blended
  • 1 teaspoon cinnamon
  • 1/2 teaspoon vanilla
  • 1/2 teaspoon of almond extract (or more vanilla)

Instructions

  1. Preheat oven to 400*.
  2. First, whisk the apple cider vinegar with the milk to create a buttermilk. Let sit for 5 minutes.
  3. In the meantime, Stir together all of the dry ingredients. Next, add wet ingredients and fold in the apples, walnuts, and carrots until well-incorporated.
  4. Grease the muffin tins, or add muffin liners. Then, pour the batter into each cup until it reaches the top without over-flowing (the muffins will rise to create that nice muffin-top look).
  5. Bake in the oven for 20 minutes, or until a toothpick comes out clean.

I was very excited when I made this recipe, because they were so good! I think I ate 6 in one day 😛 Good for breakfast and snacks! They also have a good amount of fiber in them. I calculated about 4.25 grams of fiber per muffin!

Why I Love Muffins

First off, I know that I have left you in suspense for the winner of my Namaste giveaway…But now that I have finally settled down I can announce who it is! Using random.org, I RANDOMLY selected the winner…..#42! Congratulations Erin! I hope you enjoy your gluten-free goodies 🙂
Now, onto what’s important, Muffins! Lately, I have been experimenting with different recipes, and also enjoying many of the results. I have a few of these sugar free recipes coming (like apple-carrot bran!).
Why I Love Muffins
  • They are super versatile
  • They can be made extremely healthy
  • Easy to bring on picnics, to lunch, during work or school, when you’re in a hurry, while you’re hiking…
  • They taste like dessert!
Whole Wheat Banana Muffins
  • I can smear some coconut butter “frosting” on a carrot cake muffin and eat it like dessert!
  • I can bring them on the plane for an easy breakfast
  • I can eat them for lunch with a smoothie
  • I can eat them before I work out for some energy
  • Adding protein powder is easy, and tastes good

  • Whole wheat, bran, chia, flax, are all high fiber add-ins that make them powerful muffins!
  • I can eat them for any taste I’m looking for (blueberry, carrot cake, nutty, poppyseed, chocolate…)
  • They are fun to make with family
  • They make great gifts! Just put them in a cute basket and tie them with a bow 🙂
  • They can provide servings of veggies and fruit!
  • They smell good in the oven
  • I like to share them with friends
  • They taste good!

Namaste Review and Giveaway!

Yay! The lovely Sally from Namaste Foods (Cool name, huh?) was so kind and sent me some baking mixes to try and review!

Sugar free Waffle and Pancake Mix, Sugar free Muffin Mix, and some fantastic recipe cards!

Sally was so generous and helpful! She sent me a hand-written note and various papers with sticknotes that shared her thoughts about the company which specializes in Gluten-free baking. Sally (and I) encourage you to visit the FAQ section of their website to learn more about how the company is trying to make gluten-free foods more accessible to those with Celiacs Disease.

Namaste is a small company based out of Coeur d’Alene, Idaho. Is it a coincidence that my little cousin who has Celiacs lives very close by? Anyway, according to the company, The word “Namaste” (pronounced “Naa-Maa-Stay”) is an ancient Sanskrit word with no literal translation. They say it means, “The Spirit within me honors and respects the Spirit within you.” The word “Spirit” in this context has no particular religious connotation. You could substitute the word “Heart” or “Soul” if you like. The essence of the phrase is simply that the best part of me wishes you well. And we do wish you well. In seeking to offer you delicious allergen-free foods, we nourish the body. In nourishing the body, we hope to help nourish the mind and the spirit so you can enjoy optimum health.

First, I decided to try the waffle and pancake mix because I had been craving pancakes the last couple weeks.

The pancakes were super easy to make. Just add some water, a tad bit of oil, and an egg (or egg substitute). Stir and Voila! I made some plain (for my picky little brother), some blueberry, and some cinnamon blueberry. The package makes two batches, and the picture shown above is just one batch (That is a whole lotta pancakes!)

But how did they taste? When my dad, the harsh food critic, says the pancakes are really good; then the pancakes must be good! And in my opinion, they definitely are! I couldn’t even tell that they were gluten-free! Great Job, Namaste!

Next up, the muffins.

I had been craving poppyseed muffins lately, so I decided to go with my craving and stir some poppyseed to the mix. The mix was once again easy to make with the same oil, water, egg requirements. They add fresh vanilla bean to the mix, so I can see little black specks of the vanilla, how sweet is that? It made 12 muffins (six of which I made lemon poppyseed, and the other six almond poppyseed. This was so by adding orange juice and lemon peel to one batch, and almond extract to another).

How did they taste? My mom and I both liked them. It was a denser muffin and reminded me a lot of brown rice mochi because it had a kind of sticky inside. I loved it smeared with almond butter, and it was perfect to pack for breakfast the next day (which I spent on the airplane). They did not crumble in the little plastic bag I brought them in, nor did they crumble while I sat on the plane.

Verdict: Namaste is such a great company! It is perfect for those with celiacs disease, but still incredulously yummy for those who do not have gluten allergies. My dad couldn’t even tell that they were gluten free!

And to show how they can be even more kind and generous, they offered to give away a Namaste package to one lucky reader! (Within the United States, please, due to shipping costs. Sorry!) The giveaway would contain a Namaste Tote with perhaps a pasta mix and a baking mix, coupons, literature and assorted goodies.
