Pick-a-Fruit Crisp

The fruits of Autumn!

Like I have said before, I love fall! I also love the fruits the season gives, too. I remember going apple picking a couple years ago at a friend’s farm. She grows the most delicious apples, and makes her own apple cider vinegar with the bruised apples! Her trees were full of apples, and it took my family of five people 2 hours to pick just one tree! Crazy, but it was so much fun! She also gave us two huge bags of apples for our hard work.

Anyway, I started listing fall fruits because they are the base of my sugar-free fruit crisp!

Pick-a-Fruit Crisp

~This recipe is very versatile, and any fruit can be used. The fruit makes it naturally sweet! The fruit crisp is vegan, gluten-free, dairy-free, and of course, sugar-free!

Ingredients

  • 5 cups of fruit (frozen or fresh works! I used a mix of frozen mixed berries and 2 fresh peaches for the picture above.)
  • water or juice if using only fresh fruit
  • 1/2 cup rolled oats
  • 1/3 cup chopped nuts (I used a mix of almonds and walnuts)
  • 2 tablespoons butter or margarine (it is only vegan if you use margarine)
  • optional: spices. I used 1/4 teaspoon cinnamon and 1 teaspoon of fresh minced ginger

Preheat oven to 375*. If using frozen fruit, first thaw the fruit in a 2-quart baking dish. If you are using fresh fruit, chop the fruit and place into the baking dish. Then add a bit of water or juice to the fresh fruit.

Next, mix together the oats, nuts, and spices. Then, chop the butter into small pieces and mix with the oat-nut topping. Place the topping on the fruit, and spread over the top. Bake the crisp for 30-35 minutes or until the fruit is tender and bubbling. If the top is not golden brown, you may wish to broil it for a few seconds until it has that nice golden coloring.

Spoonful of Gluten Free

Yes, gluten free. The past week or so I have been having tummy issues (every time I eat, it hurts!), so I have decided to experiment by going on a gluten-free diet to see if it helps my poor tummy.

This means my last, yummy cornbread recipe is off the menu, right?

WRONG-O!

I picked up a pack of brown rice flour to experiment with. I used the exact same recipe, found HERE, but instead of adding 1/2 cup of whole wheat flour I added 1/2 cup brown rice flour.

Served with a bowl of veggie-rice-and-bean soup

It turned out great! I might have liked it even better than my original recipe. The brown rice flour made it a bit fluffier, but it still had that authentic “corny” taste.

Anita also had a great idea, and suggested that I toast the cornmeal in the cast-iron skillet before I bake it. Thanks, Anita! I will try that out next time!

Now, onto a gluten-free breakfast crepe:

HEAB has been taunting me nonstop with her flourless crepes. I have made a few of them, and simply spread some coconut butter on it. These crepes haven’t been too special, but today’s was especially noteworthy.

Savory Carb-Free Crepe

~This crepe is free of carbs, gluten-free, dairy-free, and of course, sugar-free! It is great for a fancy luncheon or brunch, but quick and easy for any meal during the week.

Ingredients

Serves 1

  • 2 eggs
  • 1/4 teaspoon baking powder
  • salt and pepper (I used about 1/8 teaspoon of each)
  • Tablespoon of fresh herbs of choice (Today I used fresh cilantro leaves, but oregano, thyme, or basil would work great, too!)
  • Fillings: I used sliced bell peppers, tomatoes, red onions, spinach, and capers.

Using a dab of olive oil, lightly coat a skillet (I used my cast-iron) with the oil. Heat pan on medium heat. Next, in a small bowl, whisk the eggs, herbs, baking powder, and salt and pepper together. Pour the mix into the pre-heated skillet and cover. Let the crepe bake until the top gets bubbly and fluffy, there is no need to flip it. Carefully remove the crepe from the skillet-try hard not to break it because it is just so darn pretty! Then fill with your favorite fillings and wrap it up! Top with more herbs for a beautiful garnish.

Classic Cast Iron Cornbread

That’s a lot of “c’s”!

Since Fall has finally come to Florida (can you believe that it is 60* here this morning?!), it is finally time to start buying some fresh apples, pumpkin, and squash. It is also time to start wearing sweatpants in the morning while I work on my homework, and sip on some hot tea!

 

Along with fall vegetables, Cornbread is a must! I love good, hearty cornbread. None of that cakey-stuff for me! (Have you ever tried Boston Market’s cornbread? It tastes like cake-yuck!)

I use my cast-iron skillet for many things: omelets, stir-fries, chicken, salmon. I love how the pan gets seasoned every time I use it! I also love that it doesn’t have non-stick coatings on it that may cause cancer.

Classic Cast Iron Cornbread

Classic Cast Iron Cornbread

~This recipe is whole grain, dairy-free, and of course, sugar-free! Also, optionally gluten-free (see below).

Ingredients

  • 2 Tablespoons olive oil
  • 2 cups of cornmeal (I used Bob's Red Mill Coarse Ground, but any kind will do)
  • 1/2 cup whole wheat flour (For a gluten-free version, Substitute 1/2 cup brown rice flour.)
  • 1 teaspoon baking powder
  • 1 teaspoon salt
  • 2 cups milk or milk substitute (I used almond milk)
  • 2 Tablespoons vinegar (I used apple cider vinegar)
  • 1 egg

Instructions

  1. Preheat oven to 450*. Take a 10 inch cast iron skillet and pour the oil into it. Place the skillet in the oven for 5 minutes.
  2. While the skillet it heating, Combine the dry ingredients.
  3. Now, make a buttermilk by whisking the milk and vinegar together. Let sit for a few minutes.
  4. Then add the wet ingredients to the dry ingredients and mix thoroughly. Do not overmix! The batter should be lumpy. This is what gives it that hearty, cornbread taste.
  5. Take the skillet out of the oven and pour the hot oil into the batter and mix.
  6. Bake for 20 minutes, or until golden and a toothpick comes out clean.

Note: this recipe can be used in a regular pan, too. The cast-iron skillet gives it that nice, crunchy coating on the edges.

I have some lentil soup cooking in the crock pot this morning, so the cornbread will make a hearty addition to the meal. Cornbread is also great served with chili, stir-fried veggies, cornbread-burgers, or even made into a pb&j! Here is what I did with my last batch of cornbread:

Next morning leftovers with an egg scramble (red peppers, spinach, and onions-Oh my!)

Healthy Puppy Chow!

Yes, you heard right. That lovable childhood treat can be healthy!

I used to love puppy chow-the way the peanut butter and chocolate flavor bursted in your mouth as your fingers got sticky from the powdery-white sugar. Yum.

"Real" Puppy Chow

Unfortunately, “real” puppy chow is made with chocolate chips, peanut butter, butter, and powdered sugar. This racks up to be 16 grams of sugar per serving (according to Chex.com Recipes). But who ever sticks to that measly 1/2-cup serving anyway? It’s too good to not have seconds (or thirds….or fourths)!

Enter…My Puppy Chow:

Under-a-Minute Healthy Puppy Chow

~This puppy chow takes less than a minute to make, and is the perfect snack for those days when you are in a rush. The recipe is vegan, gluten-free, dairy-free, and of course, sugar-free!

Ingredients

Serves 1

  • 1 cup rice chex (or other cereal of choice)
  • 1-2 Tablespoons peanut butter
  • 1-2 Tablespoons cocoa powder
  • optional add-ins: peanuts, cacao nibs, dried fruit, be creative!

Mix the peanut butter and cocoa powder together in a bowl. Add a little bit of water if it gets to sticky. Then, add the chex cereal and add-ins (if using), and stir together until well-incorporated.

How (Not) to Lose Weight

Today’s post is a bit different. I am going to share with you a paper I wrote last year for my English class (Advanced Composition). I worked with my wonderful teacher to create a satirical paper that I enjoyed writing! I also added pictures to make it even more fun!

How (Not) to Lose Weight

“Do you need to lose weight fast? Do you want toned arms and legs? Do you want six-pack abs overnight? If so, try our product today, and we guarantee that you will lose 20 pounds in the first week!” How many times have we heard this campaign? Suddenly, a new “miracle food” reduces weight, and a food that we have happily been eating for years becomes deadly. Then, a new product like a magical waistband slims and tones the belly in just one week. It sounds too good to be true! They usually are too good to be true, and hundreds of these miracle diets and products lurk around waiting for the next culprit to fall into their traps. Which products and diets actually work, and which ones will leave you and your body drained and flabbergasted?

The first of these, the “carbo-deprivo,” will help you lose weight fast by cutting all carbohydrates out of your diet. You heard right-no pasta, fruit, bread, oats, dessert, or anything else that contains carbohydrates. This diet allows you to eat all the bacon and butter you want, and you will still lose weight. Even though high fat and protein diets damage the intestinal track and clog arteries, this diet will “do wonders.” I know that the body demands complex carbohydrates in order to function properly; but the point of this diet is to lose weight fast, not to be healthy in the long run.

If this “carbo-deprivo” meal plan does not work for you, plenty of other processed meal plans can be yours at a click of a button. Nutrisystem, The Cookie Diet, Jenny Craig, and Atkins all allow you to eat sweets. How can you lose weight while eating sweets? That’s easy, the companies machine process the food to make them less-caloric. Take for example Nutrisystem’s macaroni and cheese, it could break a record by having over 40 ingredients. I’d definitely take their machined-processed meals made with ingredients I can’t even pronounce any day over my homemade, five-ingredient pasta.

If you would rather not have every single meal sent to you, and just have to buy one or two ingredients, then maybe these other all-or-nothing diets will make you happier. The first contestant, the cabbage soup diet, allows you to eat as much food as you want, as long as its just cabbage soup. Cabbage soup doesn’t sound good? No problem, you can lose just as much weight on the grapefruit diet. It’s super easy to keep track of your meals because the only thing you eat is grapefruit. You don’t like grapefruit? No problem, the purple food diet contains more variety because you can eat anything purple: grapes, red onions, purple cabbage, and any other purple food you can think of. I actually read something like this in the fitness bikini body training book, something about a color guided diet , eat red one week , eat green the other and so on.Surely it’s a minor thing, however, that these one-ingredient diets can cause headaches, dizziness, nausea, and light-headedness. Also, if you don’t follow them correctly you may find yourself gaining weight. Forget about the side effects! These diets will help you lose weight fast if you follow them to the letter.

Along with the all-or-nothing diets, plenty of diet “does and don’ts” sayings can help prevent you from weight gain. For example, the chewing diet has its dieters thoroughly chew every bite forty times. This excessive chewing is supposed to help you burn more calories than you eat, and help you feel fuller faster. Never mind that it will take you a good hour or so to eat an apple, this diet emphasizes chewing foods until they become liquid. Doesn’t liquid steak sound yummy? If you would rather not chew each bite you take, maybe the liquid diet better suits you. In the liquid diet, you have to drink everything, so whip out those blenders and start pureeing your dinner. A different diet that includes all liquids, called the lemonade-cleanse, requires dieters to drink a special concoction of lemon juice, water, maple syrup, and cayenne pepper. A couple weeks on this diet will have you lose up to twenty-pounds! Sure it might sound like starvation, and all you may lose is water weight and muscle; but just think about the potential pounds lost. Another diet saying says that any food eaten past six in the evening will turn into fat. Yes, you heard right, it will turn into fat. This means that you are absolutely forbidden from stepping into your kitchen after six in the evening. This is what I call a senior retirement-home curfew.

“Carbo-deprivo,” all-or-nothing diets, or liquid diets may sound ridiculous, but isn’t this the decade of nonsense? Eating healthy-wholesome foods might sound like a better approach to dieting; but according to the sales people on the television and computer, the best approach means restriction, starvation, and stress. Now that you’ve learned this, what restrictive diet will you choose: the one that makes you faint, or the one that drives you crazy?

I must say that Fall is one of my favorite times of the year. The weather is perfect, the colors are beautiful, and fall produce isn’t too bad either 😉

I love apple and pumpkin picking, and the fresh, crisp smell of the autumn air. Breathe in the Beauty!
