Where are the Veggies?

I’m back! Whew that was a long trip! While I was out of town and on the road, I missed having my stocked kitchen with fresh produce. All I wanted when I got home was a huge plate of veggies. I craved them. Therefore, I made myself a gigantic salad for dinner when I got home. Thank goodness the vegetables stayed fresh in the fridge while I was gone!

Hard-boiled eggs, purple onions, avocado, apples, celery, tomatoes, artichoke hearts, pickles (yes they are  good on salads), pecans, and spinach. All drizzled with homemade Dijon Mustard Dressing: Dijon mustard, balsamic vinegar, olive oil, salt, pepper, oregano, rosemary.

While on the road, though, I managed to find some healthy eats. Sometimes it is difficult to find healthy food on the road. I try to stick to veggies, fruit, and meat, and then I supplement with the snacks I pack. Here are some of my favorite on-the-road restaurants and what I usually order:

On-the-Road Restaraunts

  • Fast-Mexican: Chipotle, Moe’s, Qdoba, and Panchero’s are my favorite. It is so easy to order a “Burrito Bowl” at any of these places. Rice, beans, meat, veggies, salsa, and guac! I love how Chipotle’s meat is hormone-free, and they try to use as many local ingredients as possible. I also really like Qdoba’s Mexican Gumbo: rice, beans, and veggies all topped with a spicy broth. $4.99-$9 depending on the meat you get and if you add any extras.

  • Subway: It’s hard to find lots of vegetables on the road, and I love how I can load up on bunch of them at Subway. I get their spinach salads with all the veggies (except jalepenos) with oregano and pepper. I suggest using oil and vinegar as the dressing, though, instead of their pre-packaged dressings loaded with high-fructose corn syrup and hydrogenated oils. $5.

  • Wendy’s: Huh? Yep, you heard right! I love getting their small chili with a baked potato. Filling and inexpensive-only $2.49 for both! Their chili is chock-full of beans and tomatoes. I  would stay away from their sour cream and “butter-spread,” though (hydrogenated oil heaven). I am not a big fan of fast food “healthy” salads. The “salad” is basically a few pieces of lettuce wit some industrial chicken, shredded cheese, and a side of bad dressing. I don’t think the lettuce is very fresh, either

  • Local Supermarkets: Almost every town, no matter how small, has a supermarket. You can always go in and buy some fresh produce, nuts, or ingredients to make a pb&j! The supermarkets I visited these past couple weeks even had salad bars in them.

  • Panera: Yes, Panera sells a lot of cookies, bread, and cream-based soups, but they also sell salads and non-creamy soups!  My favorite salad is the Classic Salad, and I love the black bean soup. You can always ask for no cheese on salads that contain cheese, and again, beware of the dressings because they use sugar. Ask for no dressing or dressing on the side. You can always use lemon juice as a salad dressing! Also, skip the side of bread and go for an apple.

  • Cracker Barrel: Cracker Barrel is known for comfort food, but you can also find healthy options on the menu. I love the veggie plate (four sides) with green beans, pinto beans, corn, and boiled cabbage. Just a heads up-the side of carrots are glazed and sugared carrots. Also, the grilled pot roast is magnificent! It is a rather large portion of meat, but it is topped with wonderfully grilled onions and mushrooms.

So what’s a girl to do with a domain of her own? Make business cards, of course!

My mom was a graphic designer, so she taught me how to use photoshop at a young age. I used to make business cards just for fun, and I made them all the time for homework and other business endeavors of mine. I always have her look over my work, and she gives her input so I can create the best business card I can!

Also, remember when I told you my Smacaroons sold at Katie’s Bake Sale for Japan for $96? Well I am sending a triple batch off today in an adorable little jar for the gracious bidder!

I sure do hope the Smacaroons arrive safely!

If you haven’t made them yet, I strongly encourage you to do so! They are sweet and salty, tropical yet comforting, and oh so healthy.

Honestly, I love changes. I think it gives me a fresh outlook on life, and it inspires me to have a little hop in my step 😉 When I was little, I used to share a room with my sister. Every few months we would totally rearrange our room. On that day-our stuff would be everywhere! Beds turned upside down, drawers emptied, knick-knacks  thrown all over the floor! SO MUCH FUN!

Use up that White Flour!

No, I am not suggesting you eat white flour. I am suggesting that you play with it!

 

Homemade Modeling Clay

~This is not like play dough, but this is the type of clay that dries into shapes. Keep leftovers in a air-tight plastic bag to keep from drying out.

Ingredients

  • 2 cups flour
  • 1 cup salt
  • 1 cup water
  • 2 Tablespoons vegetable oil
  • optional: food coloring or paint

Mix all ingredients together until smooth. Feel free to adjust wet or dry amounts to create the desired consistency of a tough, yet workable clay.

 

Shape into anything you like! Make beads, animals, letters, shapes. Then, put in a dehydrator over night or until dry. If using an oven, turn on low temperature, preferably 200*, and bake for a few hours or until dry. The bigger the shape, the longer it has to cook and dry.

Then, paint it if you wish!

This is a great way to use up all that yucky white flour, white salt, and gross vegetable oil you might have lurking in your cabinets. Then you can replace them with fun stuff like coconut flour, garbanzo bean flour, himalayan salt, olive oil, or coconut oil!

Did you see that I didn’t paint any of them yet? Well…..I’ll leave that up to you! What colors should I paint my new creations???

Sugar Free goes to D.C.

Hello everyone! I am back from my wonderful trip to D.C., and I am full of sugar-free recipes I am itching to try!

For now, though, take a look at some of the things I did:

I took a trolley around the city to see some of the national monuments...

Including the Lincoln Memorial...
And the Iwo Jima memorial.

The trolley driver, Jazzy Jan, taught me an interesting fact. Do you know the difference between memorials and monuments? A memorial is made after someone dies and a monument is made during his/her lifetime. For example, the Washington Monument was made during George Washington’s life, and the Lincoln Memorial was made after Abraham Lincoln died.

I also took a tour of the Capitol Building

Saw the Library of Congress. The most gorgeous library ever. If you take a trip to D.C., I suggest making time to visit this Library.

I had to make a stop in Chinatown, too, to get some wonderful, hot chicken and rice noodle soup to warm me up! Pho DC-Vietnamese noodle bar.
I saw "Liberty Smith" at the Ford's Theatre. Hilarious! I had a blast listening and watching this musical. The Theatre was beautiful and cosy, too.

History Lesson! What important event happened at the Ford Theatre? I’ll  show you where it happened:

If you guessed, “Ford Theatre is where President Abraham Lincoln was assassinated,” you are correct! This Friday, April 15th, marks the 146th anniversary of Lincoln’s Assassination.

I also visited the American History Smithsonian Museum. I saw the Ruby Red Slippers from the Wizard of Oz...

And Julia Child's Kitchen, of course!
Almost all of Child's pans were made of copper. A man told me that copper is one of the best heat distributers.

There was so much to see at the museum including Lincoln’s top hat and the flag that inspired our National Anthem. I could spend a month looking at all of the artifacts in the museum. Did you know the Smithsonian isn’t just one museum, but a collection of 19 museums all centered in an area of D.C. called, “The Mall?” Pierre Charles L’Enfant, the designer of the streets of D.C., envisioned a mall of history for D.C. where people can learn and see America’s artifacts. 33 years after his death, the first Smithsonian museum, the castle, opened.

I was exhausted by all of this new knowledge (and walking)

This was my first time visiting the nation’s capitol, and it was gorgeous. All of the architecture was immaculate, and I could spend years looking through all the history. Just a Spoonful of Sugar (or 20)

This is a pretty serious post, and I hope you don’t hate me for it.

I’m addicted to sugar.

This whole blog is a lie! I hate bitter chocolate, and I add sugar to all of my recipes. I usually have donuts everyday for breakfast, cookies for lunch, and cake or pie for dinner. Oh yeah, I also drink about 4 Mountain Dews per day. I’m addicted to the white stuff.

I’m a sugar-free girl! Don’t take me too seriously 😉

However, a sugar addiction is something you should take seriously.

If you have any of the following symptoms, you might be addicted to sugar:

  • Despite your desire to give up sugar, you continue to eat it compulsively.
  • You feel like you need sugar in order to function normally each day.
  • When you stop eating sugar, you experience withdrawal.
  • While you eat sugar everyday you develop a tolerance for it, so you increase your consumption in order to achieve the same experience.

Why is sugar addictive?

Sugar is a highly refined substance that does not appear alone in nature. It looks very similar to cocaine, and sugar acts like heroin when it hits the brain. A study shows that sugar affects the brain chemistry and thus might be expected to cause addictive behavior. In the study, written by Nicole Avena and others, it was shown that sugar bingeing can cause withdrawal symptoms and cravings.

The effects sugar has on behavior is quite similar to the neurochemical changes in the brain that also occur with addictive drugs. One finding shows that sugar and the taste of sweet activate beta endorphin receptor sites in the brain, the same receptor sites that are activated by heroin and morphine.

The implications of these findings show that sugar substitutes (ex. splenda, aspartame, saccharin) are not the answer for people who want to kick their sugar addiction. Children given candies and drinks made with sugar substitutes may become sugar addicts when they grow up, and they will find it difficult to give up sugar and other refined carbohydrates in the future.

Health problems associated with a sugar addiction:

  • depression
  • mood swings
  • irritability
  • depletion of mineral levels
  • hyperactivity
  • anxiety or panic attacks
  • chromium deficiency
  • depletion of the adrenal glands
  • type 2 diabetes
  • hypoglycemia
  • obesity
  • candida overgrowth
  • high cholesterol
  • anti-social behavior such as that found in crime and delinquency
  • anger control issues
  • insomnia
  • decreased immune function
  • aggression
  • neurotransmitter deficiencies
  • high blood pressure
  • heart disease
  • asthma
  • alcoholism
  • acne
  • PMS
  • OCD
  • fibromyalgia
  • attention deficit
  • cancer
  • binging
  • obesity
  • chronic fatigue
  • addiction
  • hormone imbalance


How to get over your sugar addiction:

  • Most people develop a sugar addiction because they are unsatisfied with their life, and/or depressed. First, try to gain control of your life and emotions. Treat food and sugar as fuel, not as a comfort to your problems. Find activities that you enjoy, and enjoy your life!
  • Keep sugar out of your house so that you are not tempted by it.
  • Exercising reduces cravings and produces healthy endorphins to help you feel good!
  • L-Glutamine supplements can reduce sugar cravings.
  • Eat mostly savory foods to reduce your sugar craving. I find that when I eat savory breakfasts and snacks, I don’t crave sweets as much. Heather wrote a great post about this HERE.
  • Treat sweets as treats. Today’s modern conveniences give us the ability to eat sweets every day. Treat them as a treat, though, and eat whole food desserts. Only have dessert on a special occasion, or once or twice a week. Not every day after every meal. Click HERE for my healthy dessert recipes.

Watch this informational video below about sugar addiction if you are serious about giving up your sweets. It includes great information about sugar in today’s diet. It is about 90 minutes long, so you may want to watch short snippits of it at a time.
