High Protein Cookies

June 15, 2011 By Alex@Spoonful of Sugar Free

I’ve made High Protein Cookie Dough…

So the logical thing to do is make High Protein Cookies! Duh!

High Protein Cookies

~These cookies are high in protein because of the garbanzo beans. Don’t shy away from it, though, because it tastes fantastic! Dairy-free, vegan, gluten-free, and, of course, sugar-free

Ingredients

  • 1 1/2 cups cooked chickpeas, well-rinsed
  • 1 tsp vanilla extract
  • 3 oz. unsweetened chocolate, chopped
  • 1/2 cup nutbutter (I prefer making it a Peanut Butter Chocolate Chip Cookie Dough by using peanut butter)
  • 1/4 cup nondairy milk (I used almond milk. Water will probably work, too)
  • 1 teaspoon baking powder

Instructions

  1. First, drain and wash chickpeas well. Make sure they are well-washed so that the cookie dough doesn’t taste like beans.
  2. Add all the ingredients except chocolate into a blender or food processor and process until smooth. Adjust liquid as needed. Stir in chocolate chunks.
  3. Drop dough by Tablespoonfuls on an un-greased cookie sheet.
  4. Bake at 400* for 15 minutes or until the bottoms are nice and brown.

These cookies make fabulous “protein bars.” I eat them before and after I work out. For my taste buds, they are perfect because I love bitter chocolate and non-sweet peanut butter. However, those who do not like unsweetened things may not like the flavor. I suggest adding a mashed banana to the batter. Not only would it taste fabulous, but it would add a bit of sweetness.

Health Benefits
  • Chocolate: Click HERE for a post I did about all the benefits of chocolate.
  • Chickpeas: Click HERE for a post I did about all the benefits of chickpeas.
  • Peanuts: These legumes are full of protein with 7g per ounce. They also have a great monounsaturated fat content that helps your heart and brain. Peanut is a good source of Coenzyme Q10 which protects the heart during the period of lack of oxygen example high altitudes and clogged arteries. It also has a high antioxidant and high niacin content that helps in the recovery of cell damage and provides protection against Alzheimer’s disease and age-related cognitive problem.

Thought-provoking, mind-prodding question of the day:

After you work out do you crave carbs, fat, or protein? Do you crave sweet or savory?

I am always hot and sweaty after I work out, so I crave cold drinks like smoothies or a V8.

Red, White, and Grey?

June 14, 2011 By Alex@Spoonful of Sugar Free

Happy Flag Day!

Did you know it was flag day? Honestly, I never really know these things until I look at my calendar in the morning and say, “Hey everyone-It’s Flag Day!” (In the United States atleast)

I never knew this before, but Flag Day is the day that the United States adopted the flag Betsy Ross made in 1777. Wave those flags high! And eat ’em, too!

~One Size Fits all Pancakes with frozen strawberries, melted.

I tried to make the pancakes “blue” by adding some concord grape juice, but they ended up turning grey. It would be better if I had some blueberries, but I didn’t have any at the time. I need to fix that!

Grey, yet delicious!

Thought-provoking, mind-prodding question of the day:

What was the last cooking oops you did?

I’m always experimenting with different ideas and recipes. One time I tried to make banana waffles in a panini maker instead of a waffle iron. Well…let’s just say I ate some caramelized goop for breakfast that day and spent the rest of the morning cleaning the panini maker.

Changes…

June 13, 2011 By Alex@Spoonful of Sugar Free

Hello everyone!

You may have noticed that my blog looks a bit different today. Well, I have decided to change the appearance a bit to make it look more spacious. What do you think? Because of this change, I am messing around with the recipe pages so that they fit better on the page.

I already have the Recipe List page done, but the categories are going to take a bit more time. Just letting you know because the recipe page might be a little messed up for a while until I finish it.

For now, I leave you with a breakfast-on-the-go:

Instant Oatmeal, Sliced Bananas, Peanut Butter, and Unsweetened Chocolate Shavings.

I always bring a bunch of food when I am out of town, and this trip was no exception.

Thought-provoking, mind-prodding question of the day:

What do you think of the new look?

Dijon Dressing

June 12, 2011 By Alex@Spoonful of Sugar Free

Well, it looks like I might start posting everyday now! I really do love to write on my blog, but I cannot write a long post everyday. Somedays I will just pop in and share a picture, some food, or a random thought that pops into my mine. Hehe…Please bear with me… I am out of town (again!), so I don’t know if I will start the everyday postings until I get back, but for now I will share with you my favorite salad dressing I have been using lately.

Dijon Salad Dressing

~This dressing is super easy and can be made in under a minute! Feel free to adjust amounts as needed. Dairy-free, gluten-free, grain-free, nut-free, soy free, vegan, and, of course, sugar-free!

Serves 1

Ingredients

  • 1 Tablespoon Dijon Mustard
  • 1 Tablespoon Balsamic Vinegar
  • 1 teaspoon olive oil
  • 1/2 teaspoon dried oregano
  • salt and pepper, to taste
Mix and serve over your favorite salad.

Thought-provoking, mind-prodding question of the day:

What is your favorite salad dressing?

I am usually just an oil and vinegar lady. Give me some for my salad, and I will be fine! Except yesterday I ordered a salad from Subway, and they forgot to put the dressing on my salad! Dry salad? Gross! Later, I found some mustard and drizzled that on it…

Challenge Officially Over!

June 11, 2011 By Alex@Spoonful of Sugar Free

The Sugar-Free Challenge is Officially over! I’ve had so much fun these past ten days, and I hope you have, too.

A couple other bloggers created some delectable-looking sugar-free recipes during the challenge, too. Check ’em out:

The Flourishing Foodie’s Dark Chocolate Raspberry Cups

Mowenackie’s Bangkok Noodles with Spicy Tomatoes

The Mommy Bowl’s Indian Spiced Rice Pudding

Damjana Likes it Wholesome’s Bear-the-Cutie Fudge Balls

Whole Wheat or Bust’s Personal Vanilla Blueberry Pie

Thought-provoking, mind-prodding question of the day:

What do you think of me posting everyday like I have during the challenge? Do you like it, or do you think it is too much?

I don’t know if I will be able to post everyday; but if I do, not all of the posts will have big recipes with health facts diagrammed and everything. Some of them would be simple posts, maybe a picture or two of something I did/ate. I wouldn’t be like the amazing Leanne who not only posts a fabulous recipe everyday, but her photos are all worthy of a prestigious food magazine. I don’t know how you do it, Leanne!

Day 10: Last Day of Challenge!

June 10, 2011 By Alex@Spoonful of Sugar Free

Welcome to day ten of the Sugar Free Challenge! Today is officially the last day of the challenge. I have had so much fun creating sample menus and helping you all with the challenge. A big thank you to everyone who joined! I hope you all had a great time learning (and eating!) sugar-free food. Maybe you found that it wasn’t as hard as you thought? Or perhaps you found you ate too much sugar before?

Here is today’s sample menu:

Breakfast: Mocha Oatmeal.

Lunch: Steak Salad. Sliced steak, spinach, cucumbers, red peppers, onions, olives, fresh strawberries all drizzled in balsamic vinegar and ground black pepper.

Dinner: Leanne’s Comforting Baked Mac n’ Cheese with Bacon. Goodness gracious everybody, this gluten-free, dairy-free mac n’ cheese tastes delicious! It really is comforting-nice and warm in my belly 😀

Dessert: Chocolate Almond Cookie Dough Bites.

Again, thank you all so much! I have had a wonderful time with this challenge. I hope you continue to eat at least low-sugar (if not sugar-free!). A word of warning: be careful going back to sugar this week and weekend. Don’t go over board because your body is not used to eating sugar these past ten days.

Thought-provoking, mind-prodding question of the day:

How was the sugar-free challenge???!!! Please tell me all your experiences and how your body feels! I would love to know!
