You say Tomato…

 Recently, a friend gave me this tomato plant. I planted it in a larger plant, and I cannot wait for it to start producing some fruit! Then I can make some more delicious “lasagna.”

(Bad camera pictures, still. I will be getting my camera back tomorrow, so I will have some better food pictures soon!)

Instead of noodles, I sliced some zucchini into thin slices.

Layered it with tomato sauce and a variety of veggies and mushrooms.

Some ground beef.

And made a vegan “ricotta cheese” with walnuts, cashews, tahini, lemon juice, nutritional yeast, and salt.

I baked it for 30 minutes at 375* and topped it with fresh basil.

It was very tasty, but I still need to tweak the recipe a bit. There was too much “juice” with the tomatoes and sauces that I needed to drain it before serving.

Thought-provoking, mind-prodding question of the day:

What is your favorite way to eat tomatoes?

I like mine in bruschetta, fresh salsa, or as “buns” for burgers!

    I love tomatoes in salsa. I’d say my perfect salsa is 95% fresh tomatoes, and about 5% red onion and cilantro!

      Fresh salsa is the best…only my favorite is probably 50% tomatoes and onions and 50% cilantro! I LOVE cilantro 😀

    Favorite way to eat tomatoes: Caprese salad with mozzarella & balsamic vinegar… mmmmmmmmmmmm 🙂

    i love making zuc lasagna (just the way you did- but without the vegan cheese which sounds awesome!) and it always comes out watery. but i love it anyway 🙂

    All weekend I was eating mozzarella, tomato, basil, and olive oil salads at the beach. It was surprisingly easy to pack up and made for tasty snacks. My roommate had a topsy turvey tomato plant, but it died almost instantly 🙁 I hope you have better luck.

    Hmmmm, great question. I would have to say in a salad. I don’t really care for tomatoes too much, but I do like me a nice mean pasta sauce….maybe I will say pasta sauce 😉

    Mmm! LOVE tomatoes! Sadly, my little tomato plant isn’t doing so wellright now…I think it’s just been too dry and TOO HOT! I can’t seem to keep enough water in it! 🙁 Lately I’ve been loving on some heirloom tomatoes from the farmer’s market…using them to top burgers, pizzas, and salads but my all time favorite way to eat a tomato is on a sandwich with a slice of cheese and some mayo! Yum yum yum!

    Really fresh tomatoes?
    Probably with some really fresh basil and some real mozzarella. Caprese salad.

    Vegan wise? Skip the mozz…still amazing.
    That being said, your ricotta cheeze has me googling…

    Hi Alex! I meant to post this a few days ago! I have made zucchini noodle-less lasagna and it works so much better when you roast the sliced zucchini first, the lasagna won’t be so watery at the end! It’s great how you totally don’t miss the noodles!
