Paleo Pineapple Upside Down Pancakes

That’s exactly what I did on a rainy morning this week. It has been raining a lot lately, so I may have to make another batch! The pancakes look innocent enough: fluffy and plain.

Paleo Pineapple Upside Down Pancakes

Yield: 6 servings

Paleo Pineapple Upside Down Pancakes

These pineapple upside down pancakes made with coconut flour are paleo, dairy-free, gluten-free, soy-free, corn-free, nut-free, and sugar-free!

Ingredients

  • 1/2 cup coconut flour
  • 1 teaspoon baking powder
  • pinch salt
  • 1 cup dairy-free milk
  • 4 eggs
  • 2 teaspoons vanilla
  • Fresh Pineapple and Cherries
  • Coconut oil, for pan

Instructions

  1. First, make the pancakes by mixing together the dry ingredients.
  2. In a separate bowl, combine wet ingredients and stir until smooth.
  3. Combine wet and dry and mix. It is okay if the batter is a little clumpy.
  4. Thinly slice the pineapple. You may cut the fresh pineapple in a circles or chopped squares. Slice cherries in half and take out pit.
  5. Heat skillet to medium heat and grease with oil.
  6. Pour a few tablespoons of batter onto heated skillet. Lay the pineapple around the edges of the pancake and put cherry in the middle.
  7. Flip pancake after it starts to bubble slightly, about a minute.
  8. Continue to cook until browned on exterior and cooked through.

    I’ve never used coconut flour. Do these have a coconut flavor?

      Bev,

      Coconut flour is a really strange flour to work with, but I do love the flavor! yes, it does have a slightly sweet coconut taste, but it isn’t over-powering.

    Yum yum yum! These look perfect for me to try after my Whole30. I kinda struggle with getting pancakes the right size/texture/cooked consistency but maybe these will be better!

    Have you thought about using – well, if you’re using jarred or canned pineapple, about using the juice inplace of some of the milk/liquid?

    I’m thinking about using jarred pineapples I have, but want to eat them with pancakes, or as pancakes, sort of like using a banana as the base with two eggs, and zero flour of any kind. But, I’m not sure how to do that nor if it would turn out well, I’m the person who has a pancreas whom doesn’t like too much citrus, I can’t even eat two kiwis without running to the bathroom, my pancreas really doesn’t like too much citrus fruits, I’m also only making these for 1 person, I might need a blender though, But was curious about if you tried using some of the pineapple juice in place of some of the milk/liquid.

      Hi Heather,

      I haven’t tried that, but that’s a great idea! I’ve bought the canned crushed pineapple in pineapple juice, and I’m sure that would work well in place of mashed bananas in some recipes-no blender required. Let me know if you try it, sounds great!
