Day 9 of my Friends by Recipes Challenge, I give you one of Lauren‘s delightful recipes! Lauren‘s blog, Whole Wheat or Bust, is one that I visit very frequently. She is such a great gal, and her plethora of delicious recipes are so creative and innovative! She also recently went to Tibet, so it was fun to learn about what she learned in that country.
So anyway, she told me to look through her recipe page, and choose a recipe that was one of her “fave’s.” Soooo….I chose one that went she made recently. It goes with the season, and it is one she suggested for me (since she made it sugar-free!)
Spicy Sweet Potato Apple Bread
So pefect for fall.
Recipe: Makes 1 loave
Dry ingredients โ
1.5 cups whole wheat flour (Lauren, I substituted Brown Rice Flour to make it gluten free, and it turned out fabulously!)
2 tbsp dried sour cherries (optional, but awesome)
2 tsp baking powder
1 tsp cinnamon
1/2 tsp ground cloves
1/2 tsp nutmeg
1/2 tsp pumpkin pie spice
1/2 tsp ground ginger
1/2-1 tbsp fresh grated ginger
Wet ingredients โ
1 egg
1 cup 1% milk
50 drops liquid stevia
1 cup baked sweet potato, mashed
1/3 of a large, sweet apple, chopped into little pieces
1 tbsp real butter
Directions –
Place the dry ingredients in one bowl and the wet in another. Mix each separately. Pour the dry over the wet and stir with as few swoops as possible. Pour into a greased 9ร5 inch pan.
I had a really hard time with the baking times. I baked it for 80 minutes at 325 and it was still not quite done yet, so I turned it up to 350 and baked it for another 15. You could either do that or possibly just bake it at 350 for an hour or so. Follow your heart?
Bravo, Lauren! Bravo! This was amazingly delicious, and it was a perfect breakfast for the next morning.
Thought-provoking, mind-prodding question of the day:
If you live in the North, have you seen snow yet? Down here in Florida, ย snow is definitely not on the ground, but the mornings and evenings are quite chilly! It is a brisk 50*, and there is a slight wind chill. I’m bundled up in sweats and am drinking some hot tea while I write this post!
Lauren @ WWoB says
Oh my goshh you made it!! YAY!!! I Am so glad you liked it! I am very flattered. And I am impressed you made it gluten free! I always shy away from giving other flours a try. I definitely should.
My only bummer concerning that recipe is that mine seemed to go bad quickly, so perhaps refrigerate it?
spoonfulofsugarfree says
Yeah, I find that any baked good with chopped veggies or fruit in it go bad within a couple days! I always refrigerate (sometimes they taste better cold!)
Thanks for the recipe, girl!

Wow that looks really good! I never would have thought of a sweet potato + apple combo for bread! It looks like yours turned out really great though ๐

Mmm that bread looks good! Nope, definitely no snow. Here in south Texas, it’s in the mid 80’s….not feeling much like November.

Bread looks so moist and delicious!! No snow yet here in NC, just cold! HAHA

Yum! I’ve become a big fan of baking my own bread, especially since store-bought breads seem to be so full of sugar and hydrogenated oils and dairy products. Thanks!

Sweet potato apple bread? Wow– that would make a great breakfast muffin! Or oatmeal flavor!?? I’m glad you made it gluten-free– a few tweaks to make it vegan and voila…. the perfect fall treat.
On another note, can I just say that I am SO GLAD that there is SOMEONE who eats sugar-free? I am by no means completely free of sugar (even excluding fruit as sugar), especially with my recent bakery trips :), but it is something I feel good doing and aspire to. Although I am not perfect, and do eat sweeteners sometimes :). Agave is my first choice, as I can recover better with it then cane sugar. I loveeee my stevia however and use it all the time!
Also, your comments on my blog always make my day! Every time I see a kind comment my confidence is raised a little. Who knew blogging could help my life so much?
With sugar-free hugs,
VEGirl

Oh, thanks VeGirl!! Your comments are so great! I am glad that you aspire to be sugar-free, too, because there are so may people in America that will eat our share of sugar (and ten-fold!)…

This bread looks awesome! Glad to see I’m not the only one bundled up on these temps we’ve been having. Thanks for stopping by my blog so I could find yours! ๐

Alex, can I substitute more sweet apple for the sweet potato? My guys don’t like sweet potato. My son has Type 1 Diabetes. Do you have any recipes for breakfast casseroles that are safe for Diabetics?
